Ingredients:
1.Sabudana/sago/tapioca pearls-1/2 cup
2.Full cream milk-1 litre
3.Chopped dry fruits
4.Sugar-1 cup or as per taste
5.Cardamom powder-1/2 tsp
6.Saffron strands-1/4 tsp
Method:
1.In a bowl take sabudana/sago-1/2 cup. Wash it well till the white colour water drained out. Then add 3/4 cup water to it & soak it for 30 to 40 minutes.
2.After 40 minutes drain the excess water from the sabudana & keep aside
3.Heat a pan & add 1 litre full cream milk to it & start boiling.
4.When the milk is warm take some milk (1tbsp) and mix with the saffron to soak it & keep aside.
5.Once the milk starts boiling mix it well.
6.Add the soaked sabudana/sago & mix & cook it for 10 to 12 minutes in mediu flame.
7.After 12 minutes the milk starts reducing & the sago/sabudana becomes transparent
8.Press one sabudana to check whether cooked or not.
9.Then add sugar 1cup or as per taste & mix well.
10.Add the chopped dryfruits & cook till the sugar dissolves.
11.Nw add the saffron milk & cardamom powder.
12.Mix well & cook for 3 to 4 more minutes by keep stiring.
13.Don’t reduce the milk much because once the kheer is cool down it will become thick.
14.So now turn off the heat & serve it in a serving bowl.
15.Garnish with some pista & enjoy warm Or cold…
