Ingredients:
1.All purpose flour-1 cup
2.salt-1 pinch
3.oil-2tbsp
4.sugar-1 cup
5.cardamom pods-3 to 4
6.water as required
7.oil for frying
Method:
1.In a mixing bowl add 1 cup all purpose flour/maida-1 cup, add 1 pinch salt, oil -2tbsp.
2.Mix well until it holds shape.
3.Once get desired consistency add water little by little & knead to make a smooth & stiff dough.
4.once the dough is done cover it & allow it rest for 15 to 20 minutes.
5.mean while lets prepare the sugar syrup.
6.to make syrup heat a pan Add sugar – 1 cup, water-1 cup mix well & let the sugar dissolved.
7.Now add 3 to 4 cardamom pods Mix & let it boil for 5 minutes.
8.Now the sugar syrup is ready keep aside.
9.Then check the dough & knead a little.
10.After that divide it into 5 equal balls (medium size)
11.Dust it with corn flour & roll a thin roti out of it.
12.In the same process make all the five roti .
13.Now take one roti, add 1/4 tsp oil on top & spread. Now sprinkle some corn flour on top of the oil & place another roti. Now again spread some oil, corn flour
& place another roti. Like this do for all the roti.
14.Now roll tightly all the roti & apply some water to seal the edges.
15.After the roll is done cut it in to 1 inch pieces.
16.Now take one piece, press it little with a finger & then roll it thin with a rolling pin.
17.Repeat the process for all the pieces.
18.Now heat oil in a pan to medium & add the pheni to oil. flip it occasionally & fry until golden from all the sides.
19.Once done dip in warm sugar syrup & allow it in syrup for 5 to 7 minutes.
20.Once cools down serve & enjoy the pheni/khaja..
