Ingredients:
1.Maida(all purpose flour):1.5 cup
2.Chilli flakes/Chilli powder-2tsp
3.Kasuri methi (dry fenugreek leaves)-2tsp
4.salt to taste
5.Ajwain(carom seeds)-1/2tsp
6.Nigella seeds(kalonji)-1/2tsp
7.water as required
8.oil-1tbsp & for frying
Method:
1.In a deep bowl add maida (all purpose flour)-1.5 cup,2tsp red chilli flakes,2tsp kasuri methi-2tsp,ajwain-1/2tsp,nigella seeds-1/2 tsp,oil-1tbsp.
2.Mix everything well unti it holds shape.
3.Now add water little by little & make astiff dough.
4.Cover & allow it rest for 10 minutes
5.After 10 minutes knead it a little & divide in to 4 medium size balls.
6.Then dust the with dry flour & start roll it like a thin & round chapati with a rolling pin
7.After that cut it in to strips (vertically & horizontally) to make small pieces.
8.Now heat oil to medium for frying
9.Put the nimkis in batches in to the medium hot oil & start frying it until crispy & light brown in colour while stir in betwwn.
10.Once ready take out with a kitchen tissue.
11.Seve it with indian masala Chai & enjoy..
