How to make Bhindi Do Pyaza|Bhindi Do Pyaza

Bhindi Do Pyaza is a north Indian dish.
Bhindi is the Indian name given to okra.
“Do” means twice & “pyaz” refers to onions.
So as the name says bhindi do pyaza is okra cooked with twice the amount of onions.
It is mostly serve in restaurants or in Dhaba. It’s super simple and tastes great with rice or roti.
There are different versions of making Bhindi. Here is my simple & healthy version of making this great recipe..

Ingredients:

1.Bhindi/Okra-300 gm
2.Sliced onion-1/2 cup
3.Diced onion(petals separated)-1/2 cup
4.Oil-2 tbsp
5.Cumin seeds-1tsp
6.Ginger garlic paste-1tsp
7.chilly-2 nos
8.Turmeric powder-1/4 tsp
9.Red chilly powder-1/2 tsp
10.Coriander powder-1/2 tsp
11.Cumin powder-1/2 tsp
12.Salt as per taste
13.Chopped coriander-1 tbsp

Method:

1.Take 300 gm okra/bhindi Wash it well & dry it with kitchen towel. Then cut in to pieces of 1/2 inch.
2.Then cut one medium size onion in to slices & cut another medium size onion in to dices & separate the petals.
3.Now heat a pan & add oil 2 tbsp.
4.When the oil is hot add 1 tsp cumin seeds & let it splutter for some seconds.
5.Then add 1/2 cup sliced onions & sauté until it becomes transparent.
6.Now add 1 tsp ginger garlic paste, 1 to 2 chilly sliced. mix well & sauté for 2 minutes.
7.After that add the chopped okra, mix well & sauté for 2 minutes.
8.Then add 1/4 tsp turmeric powder, 1/2 tsp red chilly powder, coriander powder & 1/2 tsp cumin powder.
9.Mix everything well with okra.
10.Now add salt as per taste & mix well.
11.Then cover it & cook for 3 to 4 minutes.
12.After that add 1/2 cup diced onion, mix & sauté for 2 minutes.
13.Then add chopped coriander-1 tbsp, mix well & cook for a minute.
14.Now the bhindi do pyaza is ready to serve.
15.Serve hot with Roti or paratha & enjoy….
