Ingredients:
1.Parwal/Pointed gourd-250 gm
2.Potato-200 gm
3.Garlic-4 to 5 pods
4.Ginger- 1/2inch
5.Onion-1 medium
6.Cashewnuts-10 to 12
7.Tomato-1 medium
8.Chilly-2 nos Or how much spicy u required
9.salt to taste
10.Oil
11.Cumin seeds-1/2 tsp
12.Turmeric powder- 1/4tsp
13.Red chilly Powder-1 tsp
14.Cumin powder- 1/2 tsp
15.Coriander Powder-1 tsp
16.Garam masala-1/2tsp
17.Coriander leaves
18.Water-1/2 cup to 1 cup

Method:
1.Take parwal/pointed gourd 250 gm. Wash it well & dry with paper towel. Then cut it into diagonal pieces by removing the stalks.wash & cut the potatoes
in to cubes & set aside
2.Heat oil in a pan & deep fry the potatoes first till golden & cooked. Then take out & keep aside. Now put the parwal in to the oil & deep fry
like the potatoes. Take out & keep aside.
3.heat another pan & add oil 1 tbsp.When the oil is hot then add roughly chopped garlic & ginger. saute for 2 minute. Then add the roughly sliced onion
& saute it till soften.Now add 10 to 12 cashew nuts, 2 to 3 green chilly, one medium sized chopped tamoto & little salt. Saute it till tamotoes soften.
4.Now let it cool for a while then take out in a blender & make a smooth paste out of it & keep aside.
5.In the same pan add oil-1 tsp. Let it be hot. Then splutter 1/2tsp cumin seeds.Then to it add the blended paste & saute well for 3 to 4 minutes. The add
turmeric powder-1/4 tsp,red chilly powder-1 tsp,Cumin powder-1/2 tsp & coriander powder-1 tsp.Give it a good mix & saute till oil separates.
6.Then add the fried potatoes & parwals to it & mix well. Then add garam masala-1/2 tsp. Add water 1 cup or as much you need to keep the gravy. Then give
it a good mix. Cover & cook for 4 to 5 minutes while stir in between. Then add coriander leaves to it & mix . Turn off the flame & take out.
7.Serve it hot with plain rice, roti, chapatis & Naan. Enjoy & let me know your feedback in the comments section.
