Ingredients:
1.Grated jaggery-1/2 cup
2.Fruit juice-1/4 cup
3.Coconut flakes-1tbsp
4.Dried cranberries-1tbsp
5.Dried cherries-2tbsp
6.yellow raisins-1tbsp
7.Black raisins-1tbsp
8.Tutti fruti-4tbsp
9.Curd-2tbsp
10.Milk-1/3 cup
11.Oil-1/4 cup
12.Maida/all purpose flour-1 & 1/4 cup
13.Baking powder-1tsp
14.Baking soda-1/2 tsp
15.Cinnamon powder-1/4 tsp
16.Crdamaom powder-1/4 tsp
17.Ginger powder-1/4 tsp
18.Almonds-2tbsp chopped
19.Cashewnuts-2tbsp chopped
20.Pumpkin seeds-2tbsp
21.Powdered sugar-2tsp
22.Dates-1tbsp chopped
Method:
1.In a mixing bowl add jaggery-1/2 cup add 1/4 th cup hot water & mix well
2.Now add fruit juice-1/4 cu & mix well
3.Now add coconut flakes-1tbsp,dried cranberries-1tbsp,cherries-1 tbsp,yellow raisins-1tbsp,black raisins-1tbsp,chopped dates-1tbsp,yellow raisins-1tbsp,
black raisins-1tbsp Tutti fruti-4tbsp. Mix well. Cover & soak it for 1 hour.
4.In another bowl add curd-2tbsp. Mix well till it becomes smooth.Then add 1/3 rd cup milk & mix to make butter milk & keep aside
5.Now add 1/4 cup oil to the tutti fruti mixture & mix it well.
6.Place a seive & add all purpose flour-1 & 1/4 cup,baking powder-1tsp,baking soda-1/2tsp,cinnamon powder-1/4 tsp,cardamom powder-1/4 tsp,ginger powder-1/4 tsp.
Strain everything well.
7.Now cut & fold to mix well.
8.Now add gradually buttermilk & mix well everything
9.Take a mold add a parchment paper & grease with oil
10.Now transfer the batter to the greased mold.
11.Tap well to release the air.Now top with mixed nuts
12.Now heat a pan , put a stand , cover & heat for 10 minutes in medium flame
13.Now place the cake,Cover & bake for 50 minutes in low flame (In case of oven bake for 45 minutes at 180 degree in a pre-heated oven)
14.After 50 minutes insert a tooth pick to check. If the tooth pick comes clear then its done. Take out & let it cool down
15.Now clear the sides & unmold
16.Sprinkle some powdered sugar on top.
17.Then cut, serve & enjoy the soft & moist cake.
