Fried Litti chokha Platter||New style Litti Chokha||लिट्टी चोखा बनाने का आसान तरीका ।
Ingredients:
For Litti:
1.Sattu/Roasted chana dal flour-1 cup
2.Roasted carom seed/ajwain-1 tsp
3.Roasted onion seed/Kalonji-1 tsp
4.onion-1 medium crushed
5.Garlic -3 pods crushed
6.Ginger-1/2 inch crushed
7.Green chilly-2 crushed
8.salt to taste/1 tsp
9.lemon juice-1 tbsp
10.mustard oil-2 tbsp
11.Coriander leaves-2 tbsp chopped finely
12.Whole wheat flour-1 cup
13.Oil-for deep frying
Method:
Stuffing:
1.In a bowl Add 1 cup sattu/roasted chana dal flour-1 cup, Roasted carom seed & onion seed 2 tsp(1 tsp each), pounded masala of Onion-1,garlic 3 pods,
ginger-1/2′ & green chilly-2,salt to taste,lemon juice 1 tbsp, Coriander leaves, mustard oil 2tbsp & mix well to get a texture like if you take some
amount of the sattu in your fist it should bind. Don’t use water . Prepare it & then keep aside.
For the outer layer:
1.In a deep bowl take 1 cup whole wheat flour. Add 1 tsp carom & onion seeds,salt very little. Then knead a soft dough using water little by little.
For making Litti:
1.Divide the dough in to some balls . The give it a shape of bowl with your hands taking some dry whaet flour. Then stuff with 2 to 3 tsp of preapared
sattu mixture & pull upwards & then close with your fingers & give it a circular shape. Repaet the process & prepare all the litti & keep aside.
2.Heat a pan add sufficient oil for deep frying. Let it be hot in medium. Then add the litti in it & deep fry till a nice golden colour & also you can see
cracks in the outer layer. It will take maximum 12 to 15 mins in medium flame. Deep fry all the litti & take out in tissue paper.
For making Chokha:
Ingredients:
1.Brinjal-1 large
2.Tomato-1 medium
3.Potato-2 med boiled
4.Coriander leaves-1 tbsp
5.Green chilly-2 chopped
6.Onion-1 medium chopped
7.Mustard oil-1 tsp
8.Salt to taste
Method:
1. First boil 2 potatoes medium sized in a pressure cooker & cook for 3 whistles & keep aside.
2.Then Take one eggplant/brinjal & one tomato. Wash it well, pat dry with kitchen towel. Then put slits on all the sides of brinjal & tomato.
masaage some mustard oil on the skin Of both. Then turn on the gas & burn it till all the sides cooked well.
3.Then take out & peel off the brinjal & tamato cleanly.
4.In a bowl add the boiled potatoes,cooked brinjal & tomato. Then add 1 medium size onion chopped, green chilly 2 nos chopped, coriander leaves- 1tbsp
mustard oil-1 tsp,salt to taste & mix well with a masher or with your hands.Chokha is ready.
5.Then serve the litti along with chokha & tamoto chutney. & Enjoy…..
