Ingredients:
1.Chicken-1 kg
For marination:
1.Turmeric powder-1/2 tsp
2.Red chilly powder-1tsp
3.Salt-1/2 tsp
4.Lime juice-2tsp
For chicken jhal fry:
1.oil-1/2 cup
2.Bay leaf-2
3.Cinnamon stick-1 small
4.cloves-4
5.Green cardamom-4
6.black cardamom-1
7.Star anise-1
8.Black pepper corns-8 to 10
9.Chopped onions-1 cup
10.Sliced onions-1/2 cup
11.ginger garlic paste-2tbsp
12.Chopped tomatoes-1/2 cup
13.turmeric powder-1/2 tsp
14.Red chili powder-1/2 tsp
15.Green chilly-3 to 4
16.Coriander powder-1tsp
17.Cumin powder-1tsp
18.Kashmir red chilly powder-1tsp
19.Chicken masala-2tsp
20.Salt to taste
21.Coriander leaves-2tbsp
22.Garam masala-1/2 tsp
23.Ginger julliens-1tbsp
Method:
1.In a bowl tale 1 kg washed chicken.
2.Now to it add 1/2 tsp turmeric powder,1/2 tsp red chilly powder,1/2 tsp salt & 2tsp lime juice.
3.Mix it well , Cover & allow it rest for 30 minutes.
4.Now heat a pan & add 1/2 cup oil.
5.When the oil is hot add the marinated chicken & fry the chicken until it becomes brown in color. It will take 8 to 10 minutes.
6.After it becomes brown take it out in a plate & keep aside.
7.We will make the curry in the same oil .
8.When the oil is hot add the whole spices( Bay leaf-2,cinnamon stick-1,green cardamom-4,cloves-4,black cardamom-1,star anise-1,black pepper corns-8 to 10)
9.Saute all the whole spices for a minute.
10.After that add 1 cup chopped onions,1/2 cup sliced onions. Add some salt & sauté until the onions get translucent.
11.Now add 2tbsp ginger garlic paste, 2 to 3 sliced green chilly & sauté until the raw smell goes.
12.After that add 1/2 cup chopped tomatoes & powdered masala (1/2 tsp turmeric powder,1/2 tsp red chilly powder,1 tsp coriander powder,1 tsp cumin powder,
1tsp Kashmir red chilly powder,2tsp chicken masala )
13.Add 2tbsp water & sauté all the spices until oil separates.
14.After that add the sautéed chicken & mix well until it coats well.
15.Now cover & cook for 15 to 20 minutes while stir in between.
16.Now add chopped coriander leaves, garam masala-1/2 tsp, ginger juliennes 1tbsp.
17.Mix well & cook for 4 to 5 minutes more.
18.Now its done off the flame & take out.
19.Serve hot with rice or roti & enjoy…
