Ingredients:
1.Full fat milk-1 & 1/2 liter
2.Vinegar-2tbsp
3.Sugar 1/4 cup or as per taste
4.Semolina/sooji-2tbsp
5.ghee-1tsp + for greasing
6.Chopped nuts-2tbsp (Cashew nut, almonds & raisins)
Method:
1.Heat a pan & add full fat milk-1 & 1/2 liter & let it boil.
2.Once it boiled Off the heat & let it cool for 4 to 5 minutes
3.Now take 2 tbsp vinegar + 2tbsp water Mix it well
4.Then add to the hot milk little by little & stir until the milk curdles & water separated
5.Once the chena formed strain it in a cheese cloth or cotton cloth.
6.Rinse twice in cold water to remove the smell of the vinegar.
7.Now squeeze well & allow it rest for 5 minutes.
8.Now take the chena in a bowl & crumble well.
9.Then add 1/4 cup sugar, 2tbsp semolina/sooji & mix well until the sugar get dissolved.
10.Now add water little by little & mix well until get a smooth batter like cake.
11.After that add 1tsp ghee, 2tbsp chopped nuts(raisins, cashew nuts, almonds).
12.Give it a good mix
13.Now take a 5 or 6 inch round cake tin, grease it with ghee & lined it with butter paper.
14.Now pour the chena mixture, smoothen the top & tap well.
15.You can bake it in a pre-heated oven at 180 degree c for 30 to 35 minutes
16.Or Heat a kadai, place a wire stand or plate. Cover it & let it heat for 5 minutes
17.Then place the cake tin Cover & cook for 35 to 40 minutes in medium heat.
18.Once its done check it with a tooth pick.
19.Now take out & allow it cool completely.
20.Then unmold & cut in to pieces & enjoy..
