Ingredients:
1.Palk/Spinach-200 gm
2.Potato- 2 medium
3.Onion-1 medium
4.Garlic- 7 to 8 pods small
5.tomato-2 medium
6.Turmeric powder-1/4 tsp
7.Red chilly powder-1/2 tsp
8.Coriander powder-1/2 tsp
9.salt to taste
10.cumin seeds-1/2 tsp
11.Dry red chillies-2 nos
12.Mustard oil-
13.Coriander leaves
Method:
1.Take the spinach. wash it well. drain the water properly. & then roughly chopped it & keep aside.
2.Then peel off the potatoes & cut in to cubes & the slice the onions, chop the tamotoes & garlic & keep aside.
3.Heat a pan. Add mustard oil-1 tbsp, Add the potato cubes & saute it till golden brown from all the sides & then take out & keep aside.
4.In the same pan if you want add some amount oil if required. let it be hot. Then add the cumin seed & dry red chilly. Saute for one minute.Then add the
chopped garlic to it & saute till golden.Add the onion slices & saute till soft & transparent. Then Add the chopped tomatoes & saute till soft.
5.Then add turmeric powder-1/4 tsp,red chilly powder-1/2 tsp, Coriander powder-1/2 tsp. Mix well & saute for 1 to 2 minutes. Then add the chopped palak/spinach
& mix well. Then add the sauteed potato cubes & mix. Season with salt & mix well. Cover & cook for 7 to 8 minutes in medium flame stir occasionally.
6.Then add the coriander leaves. Mix & cook for 2 minutes in high flame so that the extra water will be absorbed. Then turn off & take out.
7.Serve it Hot with roti, parathas, & plain rice & enjoy….
