Mooli paratha is a famous dish in india during the winter. Mostly it is eaten as breakfast or dinner.
Stuffed mooli parantha goes well with fresh curd or Indian pickle.
You can make it at home very easily & with limited ingredients.
So lets see what all we need & what is the process of making it…
Ingredients:
1.Raddish/Mooli-1 ( 200 gm)
2.Onion-1 small
3.Green chilly-2 nos.
4.Chopped coriander-1tbsp
5.Turmeric powder-1/4 tsp
6.Red chilly powder-1/2 tsp
7.Coriander powder-1/2 tsp
8.Cumin powder-1/2 tsp
9.Salt as per taste
10.Atta/Whole wheat flour-1 & 1/2 cup
11.Ajwain/Carom seeds-1 tsp
12.Oil for sautéing.
13.Water as required.
Method.
1.Take 200 gm radish wash it well & peel the skin off.
2.Now grate it finely with grater.
3.Then transfer the grated radish to a bowl, add 1/4 tsp salt & mix well.
4.Now Cover & allow it rest for 15 minutes to release the water.
5.After 15 minutes squeeze the radish to release the water & put in a mixing bowl.
6.Don’t discard the water released from the radish will use that water to knead the atta/wheat flour.
7.Now to the radish add 2tbsp chopped onions, 1tsp chopped green chilly,1tbsp chopped coriander,
1/4 tsp turmeric powder,1/2 tsp red chilly powder,1/2 tsp cumin powder & 1/2 tsp coriander powder.
8.Give it a nice mix & keep aside.
9.Don’t add salt now will add it just before making the paratha.
10.Now in another mixing bowl take 1 & 1/2 cup atta/whole wheat flour. To it add 1tsp carom seeds & salt to taste.
11.Now add the radish water & mix well.
12.After that add water as required & make soft dough.
13.Once the dough is ready cover it & allow it rest for 10 to 15 minutes.
14.After 15 minutes knead it little & divide it in to medium sized balls.
15.Now add salt a pinch to the radish mixture & give it a nice mix.
16.Take one ball & give it a shape like katori(bowl) with hands, Then put 2tbsp prepared radish mixture
& then pull upward to seal it.
17.Then roll it with hands To give it a round shape.
18.After that dust the chakla(Platform) with flour , put the ball & press it with hand to make it flat.
19.Then roll it with rolling pin gently Like roti of uniform thickness.
20.Now heat a tawa & add some oil.
21.When the tawa is hot add the prepared paratha & cook it for two minutes.
22.After 2 minutes flip It & add 1tsp oil/ghee & spread it evenly & cook for 2 minutes.
23.Then flip it & add some more oil/ghee & spread it well & cook it until it cooked from both sides.
24.Like this make all the parathas.
25.Now serve hot with Curd/yogurt Or indian pickle & enjoy….
