Besan Laddu recipe in hindi with tips

Besan Ladoo is a a premium and traditional indian sweet round in shape usually made during festive times.
its made with gram flour or chickpea flour which is called besan in Hindi and hence the name.
Flour is roasted with ghee (clarified butter) and then sugar is added and then it’s shaped into round balls. Nuts and raisins can be added.

Ingredients:

1.Besan/Gram flour-1 cup
2.Atta/Wheat flour-1 cup
3.Chopped cashew nuts-10 to 15
4.Chopped almonds-15 nos
5.Sun flower seeds-2tbsp
6.Pistachio-1tbsp
7.Ghee/Clarified butter-1/2 cup
8.Powdered sugar-1 & 1/2 cup

Method:

For preparing besan ladoo:

1.Heat a pan & add 1/2 cup ghee or clarified butter.(You can use half oil & half ghee also) But making ladoo ghee will be good & it will add great flavor.
2.When the ghee is hot First add chopped cashew nuts (15 no’s cashew nuts roughly chopped ) & sauté for a minute until it becomes brown & take out once done.
3.Then add chopped almonds (15 no’s of almonds roughly chopped ) sauté for a minute & take out.
4.No need to roast the sunflower seeds & pistachio. we will use that as it is.
5.Now to the same ghee add 1 cup besan (gram flour), 1 cup atta (whole wheat flour).
6.Mix well & start roasting in low medium flame by continuous stirring
7.After 5 minutes the color starts changing & becomes aromatic.
8.Continue roasting until ghee releases It forms like dough & separates from pan.
9.It will take total approx.20 minutes in low medium flame.
10.Once ghee releases & you get a dough texture then turn the heat off & start stirring as the pan is still hot.
11.After that transfer the mixture to a mixing bowl & allow it to cool down for 15 minutes.
12.But don’t let it cool completely .
13.It should be warm like you can touch it with hands.
14.Now to it add the roasted nuts & chopped dry fruits along with powdered sugar 1 & 1/2 cup. You can adjust sugar as per your taste.
15.Now mix it well until it binds & holds shape.
16.In case your mixture not bind you can add 2tbsp ghee to it & it will bind & hold shape.
17.Once you get the required texture take a lemon size portion & roll with hands to give it a round shape(like laddu).
18.Like this make all the laddus.
19.You can keep it in air tight container for longer & have when you want.
