Ingredients:
1.basmati rice-1 cup
2.tomato-3 large
Whole Spices:
1.bay leaf-1
2.star anise-1
3.Cardamom-3
4.Cloves-4
5.Mace-1
6.cinnamon sticl-1 small
Other ingredients:
1.oil-2tbsp
2.dry red chilly-2
3.cumin seeds-1/2 tsp
4.onion-1 medium sliced
5.ginger garlic paste-2tsp
6.green chilly-3 slitted
7.turmeric powder-1/3 tsp
8.red chilly powder-1tsp
9.Coriander powder-1tsp
10.Cumin powder-1/2 tsp
11.salt to taste
12.Water as required
13.Coriander leaves
Method:
1.In a bowl add basmati rice -1 cup. Wash it well. Add in some water & soak it for 10 minutes
2.Mean while make puree of 2 large tomatoes & chop one large tomato & keep aside
3.Now heat a pan & add oil-2tbsp.
4.When the oil is hot add the whole spices along with dry red chilly & saute for some seconds.Now add 1/2 tsp cumin seed & let it splutter.
5.Then add sliced onion 1/2 cup & saute till soft.Now add 2tsp ginger garlic paste,slitted green chilly & saute well everything
6.Add the tomato puree & chopped tomato, salt to taste & mix well.Now cover & cook for 10 minutes in medium flame stir in between.
7.now add turmeric powder-1/3 tsp,red chilly powder-1tsp,coriander powder-1tsp,cumin powder-1/2 tsp.Mix well & saute until oil separates.
8.Now add the soaked rice & saute for 2 minutes.
9.Add water 2 cups.Adjust the seasoning.add some coriander leaves. Cover & cook until all the water evaporates
10.Now add some more coriander leaves Cover & allow it rest for 10 minutes
11.Now serve it with any raita & enjoy…
