Ingredients:

For omlette:

1.Eggs-3
2.Inion chopped-1 tbsp
3.Green chilly-2 chopped
4.Salt- 2 pinch
5.Tureric powder-1 pinch
6.Oil-1 tsp

For omlette curry:

1.Oil-2.5 tbsp
2.Cinnamon stick-1 small
3.Green cardamom-2 nos
4.Cloves-4 nos
5.Cumin seeds-1/2 tsp
6.Onion -2 medium size chopped
7.Ginger garlic paste-1 tbsp (or crushed)
8.Tamato-1 medium chopped
9.Green chilly-4 nos
10.Salt to taste
11.Turmeric powder-1/3 tsp
12.Red chilly powder-1.5 tsp
13.Coriander powder-1 tsp
14.Cumin powder-1 tsp
15.Coriander leaves-handfull
16.Garam masala powder-1/2 tsp

Method:

Making of Omlette:

1.In a bowl crack the eggs. To it add 1 tbsp chopped onion, two chopped green chilly, salt two pinches,turmeric powder one pinch. Beat well & keep aside.
2.Heat a fry pan. Add 1 tsp oil & let it be heated up. Then pour the egg mixture & spread evenly. Cook for two minutes till the liquid thickens. Then flip
& cook for one minute more. Check whether both the sides are light brown. Then take out in a plate & allow it to cool.
3.Then cut the omlette in to cubes like paneer & set aside,

Making the Curry:

1.Heat a pan & add oil 2.5 tbsp. When the oil is hot add 1 small cinnamon stick, 2 cardamoms,4 cloves & mix for 1/2 minute. Then add 1/2 tsp cumin seeds
& let it splutter.
2.Now add 2 medium sized onion chopped & saute till becomes soft. Then add 1 tbsp crushed ginger & garlic or paste. Mix well & saute till the raw smell
goes or till light brown.Now add 1 medium size chopped tamato, green chilly 3 to 4 & salt to taste. Mix well & cook for 3 to 4 minutes or till the tamatoes
soften.
3.Now add 1/3 tsp turmeric powder, 1.5 tsp red chilly powder( I prefer degi mirch powder),1 tsp coriander powder, 1tsp cumin powder. Mix well & cook for
3 to 4 minutes till oil separates.
4.Now add water 1 cup or thw quantity of gravy you required. Mix well. Cover & cook for 5 to 6 minutes. Then add the omlette cubes mix well. Cover & cook
for 4 to 5 minutes.
5.Then add the coriander leaves, garam masala powder-1/2 tsp. Give it a good mix & cook for another 1 minute. Then turn off the heat & Take out.
6.Serve hot with Plain rice. It compliments well with plain rice. You can serve it with Roti or paratha & Enjoy…
