How to make Navratan Pulao

Ingredients:

1.Cooked rice-2 cup (Basmati)
2.Oil-3 tbsp for frying the vegetables
3.cashewnuts-1o to 12
4.Raisins-15 to 20
5.Paneer cubes/Indian cottage cheese-100 gm
6.Boiled potato cubes-1 medium
7.Coauliflowder florets-1/4 cup
8.Beans chopped-3 tbsp
9.Carrots,peas,coens-1/4 cup
10.Salt to taste
11.Whole spices (bay leaf-1,cinnamon stick-1 small,cloves-4,cardamom-3,black pepper-7)
12.Cumin seeds-1/2 tsp
13.oil-2 tsp
14.Ginger garlic paste-1 tsp
15.Onion -1 medium sliced

Method:

1.Cook the rice & take 2 cups of cooked Rice & keep aside.
2.Now heat a pan & add oil 3tbsp.
3.When the oil is hot Add 10/12 cashewnuts, fry till golden & take out.
4.Now add raisins-15 to 20, fry till golden & take out.
5.Add 100 gms of paneer cubes & saute it till golden from all the sides & take out.
6.Now add boiled potato cubes & saute it till golden & take out.
7.Add cauliflower florets 1/4 cup Fry till golden & soft & take out
8.Now add the chopped beans saute till it becomes little soft. Now to it add 1/4 cup og carrots,peas & corns mixture. Saute for 3 minutes till all the veggies
soft. Take out & keep aside.
9.Now in the same pan add oil-2 tsp.
10.When the oil is hot add the whole spices & saute for some seconds.
11.Now add 1/2 tsp cumin seeds & let it splutter.
12.Then add onion slices & saute till soft & transparent.
13.Now to it add 1tsp ginger garlic paste & saute till raw smell goes.
14.Then add the cooked rice mix well & saute for 2 minutes.
15.Then add all the fried veggies,potatoes,paneer & dryfruits. Give it a good mix .
16.Add salt as per taste. Mix well & cook for 3 to 4 minutes.
17.Now turn off the heat & serve it with any sabzi of your choice & Enjoy..
