Ingredients:
1.Wheat flour-1 cup
2.Suji/semolina/rava-1/2 cup
3.Fennel seeds-2 tsp
4.Baking soda-1/4 tsp
5.sugar -2 tbsp(as per taste)
6.Salt-1/2 tsp (as per taste)
7.Oil-2 tbsp
8.oil for deep frying
9.Water to knead the dough
Method:
1.In a big bowl add 1 cup wheat flor/atta, 1/2 cup semolina/sooji,2 tsp fennel seeds,1/4 tsp baking soda,2 tbsp sugar,1/2 tsp salt mix well. Then add 2 tbsp
oil & mix well till you get the rquired texture. The texture shoul be when you keep the flour in your fist it should bind well like the texture required
for samosa.
2.Add water little by little and start kneading the dough till soft. we need the dough to be soft. Then cover & let it rest for 20 minutes
3.After 20 minutes knead again & divide in to circular balls of equal size. The size of the balls shoud be neither too big nor too small. it should be medium
& keep aside
4.Heat oil in a pan to medium for deep frying. Check the heat .
5.Then add the balls & start deep frying in medium flame till 12 to 15 minutes Or till the cracks appear & it should be light golden colour while stir
occasionally.Then take out.
6.Now again heat the oil in high flame till 1 minute then again drop the fried gulgulas and fry for 3 to 4 minutes till the outer layer is crispy and golden.
Stir continuosly. After you get the required colour & crispyness then atake out in a tissue paper.
7.Serve hot with tea or dum aloo & Enjoy…
