Ingredients:
1.Whole green moong dal-1 cup
2.Ginger-1/2 inch
3.Chopped onion-1/4 cup
4.Chopped carrots-1/4 cup
5.Chopped green chilly-2tsp
6.Chopped curry leaves-10
7.Roasted cumin seeds-1tsp
8.Salt to taste
9.Oil-1tbsp
10.Water as required.

Method:

1.First soak 1 cup whole green moong dal in a bowl for 4 to 5 hours.
2.After 5 hours drain the water.
3.Now take a blender add the soaked moong dal, ginger-1/2 inch. Now add 1/3 cup water & blend it to a coarse paste.
4.Now take out the paste in a bowl.
5.After that add chopped onion-1/4 cup,Chopped carrots-1/4 cup,Chopped green chilly-2tsp,Chopped curry leaves-15 to 20.
6.Now add roasted cumin seeds-1tsp,Salt to taste & mix it well.
7.Now adjust the consistency with some water ( I am using 2tbsp water, you can use as much as you required).
8.Mix the batter well & keep aside.
9.You can use the batter now or you can cover it and use whenever you want to prepare.
10.Just before you are going to prepare the appam add 1tsp eno fruit salt.add 1tsp of water & mix it well with the batter.
11.Don’t overmix it.
12.Now heat an appam pan.& add one one drop oil in each holes & brush to grease well.
13.When the oil is hot add one one spoon full of batter in each holes .
14.After fill each holes cover & let it cook for 2 minutes in medium flame
15.After 2 minutrs flip the appam , add some extra oil,cover & cook for 2 more minutes.
16.After two minutes check the appam whether it is cooked or not from both the sides.
17.Now serve the appam with green chutney & tomato sauce.

Note: You can use other veggies like chopped cauliflower,green peas etc…
