Ingredients:
1.Karela/Bitter gourd-200 gm
2.Onion sliced-1/2 cup
3.Onion chopped-1/2 cup
4.Tomato chopped-1/2 cup
5.Salt as per taste
6.Oil-6 tbsp
7.panch phoron-1/2 tsp
8.Green chilly-3 or as per taste
9.Turmeric powder-1/3tsp
10.Red chilly powder-1tsp
11.Cumin powder-1/2 tsp
12.Coriander powder-1 tsp
13.Dry mango powder-1tsp
14.Kitchen king masala-1tsp
15.Chopped coriander-2tbsp
Method:
1.Take 200 gm bitter gourd & slice them evenly.
2.Im a bowl take the karela slices, add some salt & mix well.
3.Now cover the bowl & put it in rest for 20 minutes
4.After 20 minutes add some water & wash the karela well.The strain the karela & keep aside.
5.Now heat a pan & add 2tbsp oil.When the oil is hot add 1/2 cup sliced onions & saute them well until it softens & become brown.
6.Then take out & keep aside
7.Now in the same pan add oil-1tbsp. Add the sliced bitter gourd & saute until 70 % cooked. Then take out & keep aside
8.Again in the same pan add oil-3tbsp.
9.When the oil is hot add panch phoron-1/2 tsp & let it splutter.
10.Now add chopped onion-1/2 cup & Sute unti onions softens.
11.Now slitted green chilly 2 nos mix & saute for 2 minutes more.
12.Now add chopped tomato-1/2 cup, salt to taste. Mix & saute until the tomatoes softens
13.Now add turmeric powder-1/3 tsp,red chilly powder-1tsp,cumin powder-1/2 tsp, Coriander tsp-1tsp. Mix well.Add little water & saute until oil releases.
14.Now add the sauteed karelas Mix well.
15.Now cover & cook for 5 minutes.
16.After that add amchoor powder-1tsp,Kitchen king masala-tsp. Mix well, cover & cook for 2 minutes more.
17.After that add sauteed onions & mix it well.
18.Now add some chopped corianer leaves Mix & take out.
19.Serve hot with chapati & enjoy..
