Ingredients:
1.chicken-400 gm
2.Onions-4 medium
3.garlic ginger paste-2 tbsp
4.Tomato-2 medium
5.Turmeric powder-1/2tsp
6.Red chilly powder-1.5 tsp
7.green chilly-4 to5 nos
8.cumin powder-1/2tsp
9.coriander powder-1.5tsp
10.chicken masala-2tsp
11.garam masala-1/2tsp
12.salt to taste
13.mustard oil- 4tbsp
14.coriander leaves-2tbsp
15.cumin seeds-1tsp
Whole spices:
1.Bay leaf-2 to 3
2.cardamom-4 nos
3.Cinnamon-3 small
4.Peppercorns-7 nos
5.cloves-4 nos
6.star anise-2
Method:
1.Heat a pan & add mustard oil-4tbsp & let it heat until it fumes.Then turn the heat to medium .
2.Now add chicken-4oogm to it and a pinch of salt & mix it.While stiring turn the heat to high & mix.
3.Then cover it & cook for 5 minutes in medium flame.
4.After 5 minutes stir it & again cover & cook for another 2 minutes until the colour changed.
5.Once the colour changed then take out the chicken from oil.
6.Then to the same oil add the whole spices ( bay leaf-3,cardamom-4,cinnamon-3 small,peppercorns-7 to8,cloves-4,star anise-2) & saute for 1 minute.
7.Then add cumin seeds-1tsp & let it splutter.
8.Now to it add chopped onions-4 medium sized , mix & saute until golden & soft.
9.Then add 2tbsp ginger garlic paste & saute until the raw smell goes.
10.After that add chopped tomatoes 2 medium & salt to taste & green chilly-4 to 5 nos Then saute until the tomatoes get soft.
11.Now to it add turmeric powder-1/2tsp,red chilly powder-1.5 tsp,cumin powder-1/2tsp & coriander powder-1.5 tsp.Mix it well & saute until oil separates.
12.Then add the fried chicken & mix well with the spice.
13.Now add chicken masala-2tsp,garam masala-1/2 tsp.Mix it well.Cover & cook for 10 minutes in medium flame while stir in between.
14.Then add water-1 cup Mix it well. Cover & cook for 6 to 7 minutes.
15.Now add coriander leaves & mix well.
16.Turn off the heat & take out in a serving plate.
17.Garnish with ginger julliens & enjoy with roti, chapati,naan or rice..
