Ingredients:
1.Aloo/potato-3 medium
2.Methi leaves/fenugreek leaves-250 gm
3.onion-1 medium
4.Garlic-4 pods
5.Ginger-1 inch
6.Green chilly-3 nos
7.Tomato-1 large
8.oil-3tbsp
9.Dry red chilly-2 nos
10.Cumin seeds-1/2 tsp
11.salt to taste
12.Turmeric powder-1/3tsp
13.Red chilly powder-1tsp
14.Coriander powder-1tsp
15.Cumin powder-1/2 tsp
16.Amchur powder-1tsp
17.Garam masala-1/2 tsp
Method:
1.Peel the potatoes & cut in to dices & keep aside
2.Wash well the methi/fenugreek leaves, dry with kitchen towel then chop it finely & keep aside
3.In a hand blender add 1 medium size onion,4pods garlic,i inch ginger, 3 to 4 green chilly chop it & keep aside
4.Puree 1 large tomato & keep aside
5.In a pan add oil 2tsp. when the oil is hot add the potatoes mix well. cover & cook for 8 to 9 minutes.
6.Then in the same pan Add 2tbsp more oil.
7.When the oil is hot add 2 dry red chilly & 1/2 tsp cumin seeds & let it splutter.
8.Then add the ground masala , mix well & cook for 8 to 9 minutes.
9.Then add the tomato puree, mix well.Now add salt to taste & cook for 3 to 4 minutes
10.Now add turmeric powder-1/3 tsp,red chilly powder-1tsp,coriander powder-1tsp,cumin powder 1/2 tsp. Mix well & cook for 2 to 3 minutes.
11.Then add the half fried potatoes, chopped methi. Mix well & saute for 2 minutes.
12.Then add 1 tsp aamchur powder & mix well
13.Now add 1 cup water mix well. Cover & cook for 9 to 10 minutes.
14.Then add 1/2 tsp garam masala Mix well & cook fr 2 more minutes.
15.Now the aloo methi sabzi is ready
16.Serve it with plain roti,rice, paratha,naan & enjoy..
