Aloo Matar Sabji Recipe
Ingredients:
1.Matar/Peas – 1 cup (Yellow/green)
2.Oil-2 tbsp
3.Whole spices(Baylef-1,cinnamon stick-1 small,star anise-1,Cardamom-3)
4.Cumin seeds-1/2tsp
5.Onion-2 medium chopped
6.Ginger garlic paste-1tsp
7.Chopped green chilly-3 to 4
8.Tomato-1 large chopped
9.Turmeric powder-1/3 tsp
10.Red chilly powder-1tsp
11.Coriander powder-1tsp
12.Cumin powder-1tsp
13.Amchur/Drymango powder-1tsp
14.Garam masala-1/2 tsp
15.Salt to taste
16.Coriander leaves
17.Boiled potatoes-3 diced
Method:
1.Take 1 cup of Indian yellow/green peas. Wash it well. Add water & soak it for whole night or 5 to 6 hours.
2.Then tarnsfer the peas to a pressure cooker , Add water 1.5 cup along with some salt. Cover & cook for 3 whistles in medium flame.
3.Boil 3 medium sixe potatoes . Peel off & cut into dice & keep aside.
4.Now heat a pan & add oil-2tbsp
5.When the oil is hot Add whole spices ( bayleaf-1,cinnamon stick-1 small,star anise-1,cardamom-3) & saute for some seconds.
6.Then add 1/2 tsp cumin seeds & let it splutter
7.Now add chopped onions & saute till it becomes transparent.
8.Add 1 tsp ginger garlic paste & chopped hreen chilly-3 to 4. SAute till the raw smell goes & everything becomes golden.
9.Add 1 large tomato chopped to it. Add some salt & saute till the tomatoes become soft
10.Then add turmeric powder-1/3 tsp,red chilly powder-1tsp,Coriander powder-1tsp & cumin powder-1tsp.Mix well &saute for 3 to 4 minutes.
11.Now to it add the boiled potatoes & saute for 4 minutes with the spices.
12.Then add amchur/drymango powder-1tsp & Mix well.
13.Add the boiled peas along with water & give it a good mix.
14.Then cover & cook for 7 to 8 minutes.
15.Add garam masala powder-1/2 tsp. Mix well. Cover & cook for 2 minutes more.
16.After 2 minutes give ita final mix & add some chopped Coriander.
17.Now turn off & take out.
18.Serve & enjoy with roti,parathas,rice etc…
